Place Next Bacon slices on baking tray and sprinkle with spices.
Sprinkle brown sugar over the bacon and pat gently. More sugar will take longer to cook and result in a crispier bacon.
Put bacon in oven and bake until the sugar has melted, approximately 25 minutes. Check after 17 minutes as oven temperatures vary greatly.
Put aside to cool.
Spicy Maple Chickpeas
Pre-heat oven to 200°C (420°F).
Drain and rinse the chickpeas. If you have time, remove the husk from the chickpeas as they will crisp up more quickly this way. Or don't, it doesn't really matter.
Pat chickpeas dry and place in large bowl with the spices and olive oil. Toss to coat chickpeas evenly.
Place on baking tray lined with baking paper and bake for about 20 - 25 minutes, until crisp and crunchy.
Pour over maple syrup and allow to cool.
Combine Vegan Millionaire's Bacon and Spicy Maple Chickpeas
Break the Millionaire's Bacon into pieces, slightly larger than the chickpeas.
Combine bacon and chickpeas, add a sprinkle of salt flakes prior to serving.
Notes
Vegan bacon contains less fat so will crisp quickly in the oven. Be mindful the more sugar placed on top, the longer required for caramelisation. I had variety in my batch and baked some with extra sugar and some with less sugar. My personal preference is for more sugar and the dark (dark, dark!) caramelised portions.Watch the bacon as oven temperatures do vary significantly and you don't want to burn the bacon. The Modern Vegan Guide is your companion for how-to-vegan your food, home and lifestyle.
