Combine dates, vanilla, dairy-free milk and pinch of salt in a high-speed blender. Blend at high speed until smooth.
Vegan Pear Bircher
Coarsely grate 2 pears into a large bowl (reserving 1 pear for serving). Add in oats, chia seeds and 3 cups of the vanilla milk. Stir to combine, cover and place in the fridge for at least 4 hours.
Ahead of serving heat a large frying pan over a medium heat. Add the oil and grapes, stirring until the grapes begin to blister. Pour in the maple syrup and cinnamon, stir to combine.
Slice reserved pear to serve with vegan pear bircher, blistered grapes, slivered almonds and remaining vanilla milk.
