Vegan Steamed Date Pudding

Vegan steamed date pudding is alcohol-free and has a toffee-like sweetness. It makes a delicious alternative to fruit-heavy puddings and is easy to make.

Equipment

  • Pudding Steamer or Basin
  • Medium Saucepan
  • Large Pot

Ingredients
  

  • 1 cup Pitted Dates chopped
  • 1 cup Non-dairy milk
  • cup Brown Sugar
  • 2 tablespoons Non-dairy butter
  • 1 teaspoon Bi-Carb of Soda
  • 1 cup Self-Raising Flour
  • Pinch of Salt

Instructions
 

  • Grease pudding basin and set aside.
  • Sift flour into a bowl and set aside.
    1 cup Self-Raising Flour
  • Add dates, sugar, milk and butter to the saucepan and boil for 3 minutes.
    1 cup Pitted Dates, 1 cup Non-dairy milk, ⅓ cup Brown Sugar, 2 tablespoons Non-dairy butter
  • Add bi-carb of soda to date mixture and as it froths add in the flour and salt. Stir well to combine.
    1 teaspoon Bi-Carb of Soda, 1 cup Self-Raising Flour, Pinch of Salt
  • Place pudding mixture into prepared pudding steamer or basin. Steam for 1½ hours by placing the pudding into the large pot, filled with water to half-way up the side of the basin. Bring to a simmer and monitor, topping up the water as required.

Note: I used a 2 litre pudding steamer and doubled the recipe quantity for the photos in this post.
