Manky Banana Muffins

Sometimes the menu plan doesn’t quite go to plan, which is why I had some nasty looking bananas left over {previous post}. Last week’s menu plan was an absolute disaster because things happened in the week to interrupt our planned meals. Like a pizza craving 🍕 But also other things. Lots of unused fresh food means I’ve been shopping my fridge and pantry to make meals and food this week. I don’t mind the challenge of this. Sometimes this means we don’t eat what we really want but food waste is a major problem and throwing away food in our house is not an option. It’s wasteful, privileged and harmful to our planet.

Enter the Manky Banana Muffins from the saddest of sad bananas sitting in the fruit bowl. It was a tragedy to watch them go uneaten and becoming browner and softer. I was overjoyed to discover at yesterday years old that banana peels can be converted to fertiliser simply with the addition of water. This left me with the banana flesh to deal with. Move over banana bread, it’s muffin time.

There isn’t a specific recipe for this, it’s bit of this and a bit of that. I vary this recipe depending on how many bananas I have and the size of the bananas. If you need to thicken the mixture a little, add in some flaxseed meal. Want it sweeter? Add some dried fruit, choc chips or some extra maple syrup. The base recipe is quite flexible and can be adjusted to suit what’s in the pantry. My favourite way is with a lashing of butter!

Equipment

  • Muffin Tin
  • Large Mixing Bowl
  • Fork

Ingredients
  

  • 2 – 3 Bananas
  • 1/2 cup Tahini
  • 1/3 cup Maple Syrup
  • 3/4 cup Oats (Quick or Rolled)
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 pinch Salt
  • 1 pinch Cinnamon and/ or Nutmeg

Instructions
 

  • Mush the bananas with the tahini.

  • Mix dry ingredients then add to the banana / tahini mix.

  • Pop in greased muffin tin and bake in 180°C (365°F) oven for 10 – 15 minutes.

Notes

This recipe can be pretty flexible and feel free to add a bit of this and a bit of that. Have less bananas? Add a little more maple syrup for sweetness. Pop in some dried fruit or chocolate chips. The base recipe is very flexible, ready for you to adjust and put your own spin on it.
