I have hit a crossroads in my life. I feel it can be neatly divided between Before Oven Dried Tomatoes (BODT) and After (AODT), such is the impact these little morsels have made on me. ⠀

Let’s set the landscape. Would I say I’m a raving tomato fan? Not especially. I eat some most days out of habit but you won’t find me thinking “I have a real hankering for tomato right now”. That was BODT, of course. I have a to-bake list that’s 100s of saved Instagram posts long and it can take months for a recipe to be picked from the list. Oddly, the ODT post was only on my list for a week or so before baking. I made a half batch of these as I was, meh – tomatoes. BODT-me now regrets that decision. ⠀

This is not really a ‘same day’ recipe as tomatoes need to oven dry for 7 – 10 hours. You can snack on a couple fresh out of the oven, sprinkled with salt flakes as you’re popping them into the pickling mix. Make a double batch. Thank me later.

- Recipe available online at CornersmithI wouldn't typically use sun-dried or oven-dried tomatoes regularly. But, since discovering this recipe, I make these each week and literally snack them from the jar. Delish!
