Rice, fresh or roasted veg and a generous dollop of this tahini maple mustard dressing make for a quick meal. Don’t stop there, thin the dressing out for an easy salad dressing. Or pour over tofu and some noodles. Make it thick like mayo or thinner for an easy-pour dressing and you’ll soon be adding this to a variety of dishes.
Making Tahini Maple Mustard Dressing
If you can, start with a mustard mother. I’ve had a mustard mother on my counter top since April and reach for it almost every day. A mustard mother, is simply a brine of mustard seeds that you can use as a base for mustards, condiments and dressings. Mustard mother is very easy to make and is an excellent base ingredient for this dressing (plus a whole lot more).
If you don’t have a mustard mother, no problems. Simply use ready-made mustard from your pantry.
Tahini has a consistency similar to peanut paste: thick and somewhat oily. This makes tahini an excellent base for a thick mayonnaise-like dressing, or a thinner pouring dressing.
Making the dressing is as simple as putting all the ingredients in a processor and blending.
