This slice is in the category of of ugly-delicious. What it lacks in charisma is more than compensated by the Biscoff base, condensed milk and juicy apricots. No bake, vegan, deliciousness!
This no-bake slice is the third classic recipe from eras past on the blog. My fascination with recreating recipes from the early 40s onwards continues. There’s a simplicity in the cooking that makes each recipe effortless, nostalgic and budget-friendly.
Vegan No Bake Apricot Slice
Originally, this recipe called for malted milk powder, malted biscuits and condensed milk. Adapting the recipe to dairy-free vegan was a breeze. Adding biscoff biscuits to the slice base modernises the flavours while keeping the original intent of the recipe.
Vegan condensed milk options are now readily available in most major supermarkets. As someone who literally used to eat condensed milk out of a can, it’s pretty good knowing ready-made vegan condensed milk can be grabbed from the supermarket shelf. It tastes just as I remember, too.
Embrace the ugly-delicious with this classic apricot slice. If you’re a fan of the classic recipes, you might also like the Vegan Dark Coffee Cake and Cornflake Biscuits.
