Strawberry Top Vinegar

Have you been enjoying the abundance of strawberries available at the moment? Everywhere I look, strawberries are on sale at really affordable prices, so I’ve been packing our fridge full of them. As I’ve been cooking up some delicious strawberry recipes (coming soon) and snacking on the fresh fruit daily, I’ve been mindful of how many strawberry tops were potentially destined for the worm farm. As much as the worms love strawberries, there’s a better way to make the most of the whole strawberry.

Strawberry Top Vinegar

Strawberry tops are edible and packed with that sweet flavour we love. Making a strawberry top vinegar takes no effort at all and you’ll be rewarded with a delicious pack of flavour to your cooking.

Equipment

  • Large Mixing Bowl
  • Fine Sieve
  • Jars for infusing
  • Bottle for storage

Ingredients
  

  • Strawberry Tops any quantity, ideally ¼ to ½ a cup
  • Vinegar apple cider, rice wine or white

Instructions
 

  • Pack washed strawberry tops in a jar. Fill jar to top with vinegar.
  • Allow strawberry tops to infuse for a couple of days in a cool, dark place.
  • Strain strawberry tops from vinegar using a fine sieve, be sure to keep the vinegar! Bottle the vinegar in jars.
