As Winter sets in, so often does cravings for hearty, filling comfort food. You won’t go wrong starting the day with this vegan bircher muesli, with sweet pear and vanilla milk.
Growing up in the tropics we never ate porridge or oats. To me, oats are a weird food with funny texture and something I’ve certainly had to acquire a taste for. Now that I live in a cold climate, I’ve come to appreciate the heartiness of oats. Warming you from within on those bitterly cold mornings and keeping you satisfied long into the day, oats have definitely made it to my breakfast routine. And while bircher muesli is often enjoyed as a Summer breakfast, this recipe with pear and warm toppings easily holds its own in Winter. Need extra warmth? Serve the vanilla milk warm.
Vegan Bircher Muesli with Pear and Vanilla
Vegan bircher muesli is simple to make. It’s as easy as choosing your favourite non-dairy milk to soak the oats. My go-to milk is always Vitasoy Soy Milky.
Vegan Pear Bircher Muesli
Equipment
- Blender or Food Processor
- Large Frying Pan
Ingredients
- 3 Pears
- 2 cups Rolled Oats
- 2 tsp Coconut Oil
- 2 cups Red Grapes
- 2 tbsp Maple Syrup
- ¼ tsp Ground Cinnamon
- ⅓ cup Almond Slivers toasted
Chia and Vanilla Milk
- 3 Dates pitted
- 1½ tbs Chia Seeds
- 1 tsp Vanilla Extract
- 3 cups Dairy-Free Milk
- Pinch of Salt
Instructions
Chia and Vanilla Milk
- Combine dates, vanilla, dairy-free milk and pinch of salt in a high-speed blender. Blend at high speed until smooth.
Vegan Pear Bircher
- Coarsely grate 2 pears into a large bowl (reserving 1 pear for serving). Add in oats, chia seeds and 3 cups of the vanilla milk. Stir to combine, cover and place in the fridge for at least 4 hours.
- Ahead of serving heat a large frying pan over a medium heat. Add the oil and grapes, stirring until the grapes begin to blister. Pour in the maple syrup and cinnamon, stir to combine.
- Slice reserved pear to serve with vegan pear bircher, blistered grapes, slivered almonds and remaining vanilla milk.
