The Ultimate Vegan Chilli

Main meals don’t often make it here. This is a real shame because cooking the dinner meal is one of my favourite things and is when my cooking is at its best. But, when there’s a delicious meal waiting to be eaten I’m not going to be wasting time photographing it, I’m focused on eating it. And my night-time lighting is pretty shocking at the moment.

But tonight, I bring to you the Ultimate Vegan Chilli. Now this claim isn’t my own. The recipe authors with 24bn recipe views, four bestselling cookbooks and creators of thousands of vegan recipes claim this could be their BEST RECIPE EVER. I’m supportive of this statement and have had this dish in rotation since we first went vegan. It’s a ripper all year round but especially on cold nights, when you want to be warmed up from the inside out.

To use the recipe description: “it’s deep, dark, smokey and possibly the richest chilli we’ve ever tasted. The mushroom mince gives it a really meaty texture, the spices make it really full-bodied and non-traditional ingredients like soy sauce and maple syrup work surprisingly well to boost that gorgeous flavour.”. Here, here. Did I also mention this chilli has CHOCOLATE in it?!

The recipe makes a huge batch of chilli which can be served with rice, made into nachos or toasted in a sandwich. It can be ready to eat in around 20 minutes but I love how the flavour develops over a day or two in the fridge.

The Bosh! cookbooks were the ones I turned to when we first went vegan. Years later, I am still cooking from these books and I have purchased each new one released. For those wanting to adapt familiar favourites to vegan recipes, I cannot recommend Bosh! highly enough.
