I’m a huge fan of the sweet/ spicy taste. I love snacks and I love bacon. I’m the person that looks for bacon on a menu and will choose a dish based on the bacon: other ingredient ratio. Bacon is something I used to miss terribly but no longer! Earlier this year Next Bacon was recommended to me and my vegan bacon-y dreams were reignited. This bacon cooks, smells and sizzles like you’d hope. Since then, it’s fair to say I’ve been cooking bacon a few times a week. Because I can. And I love bacon.
You’re either going to love me or hate me for this recipe because it’s so deliciously snack-able (and versatile), one serve is never going to be enough! I made a batch fresh this morning and the delicious smell of bacon permeated the house. I’ve snacked on them all day because, bacon.
Spicy Maple Chickpeas with Vegan Millionaire’s Bacon
Equipment
- Wire Rack
- Baking Tray
- Large Mixing Bowl
Ingredients
Vegan Millionaire's Bacon
- 200 g Next Bacon
- 1 tsp Cayenne Pepper
- ½ tbsp Chilli Flakes
- ½ tbsp Cracked Pepper
- ½ cup Brown Sugar
Spicy Maple Chickpeas
- 1 can Chickpeas (400g)
- 1 pinch Salt
- 2 tbsp Olive Oil
- 1 tsp Cayenne Pepper
- 1 tsp Chilli Powder
- 60 ml Maple Syrup
Instructions
Vegan Millionaire's Bacon
- Pre-heat oven to 175°C (350°F).
- Place the wire rack over the baking tray.
- Mix spices, adjust seasoning to taste as desired.
- Place Next Bacon slices on baking tray and sprinkle with spices.
- Sprinkle brown sugar over the bacon and pat gently. More sugar will take longer to cook and result in a crispier bacon.
- Put bacon in oven and bake until the sugar has melted, approximately 25 minutes. Check after 17 minutes as oven temperatures vary greatly.
- Put aside to cool.
Spicy Maple Chickpeas
- Pre-heat oven to 200°C (420°F).
- Drain and rinse the chickpeas. If you have time, remove the husk from the chickpeas as they will crisp up more quickly this way. Or don't, it doesn't really matter.
- Pat chickpeas dry and place in large bowl with the spices and olive oil. Toss to coat chickpeas evenly.
- Place on baking tray lined with baking paper and bake for about 20 – 25 minutes, until crisp and crunchy.
- Pour over maple syrup and allow to cool.
Combine Vegan Millionaire's Bacon and Spicy Maple Chickpeas
- Break the Millionaire's Bacon into pieces, slightly larger than the chickpeas.
- Combine bacon and chickpeas, add a sprinkle of salt flakes prior to serving.
