No Harm Faux-Gras

As fellow Victorians once again endure a COVID lockdown, many will be reactivating the sourdough starter, most likely established March 2020. What better to be slathered over thick, crusty bread than an earthy, delicious Faux Gras?  Nothing, I say. Nothing!

This recipe doesn’t require any tricky ingredients. Made from mushrooms, lentils, beetroot, herbs and some seasonings – it’s really quite simple to make. It does call for cognac, which I never have. As non-drinkers, our selection of spirits – actually booze, generally – at home is ridiculously sparse. There’s usually a bottle of red from a long-ago recipe requirement and a random assortment of liqueurs and spirits from hampers/ gifts. Unfortunately, there’s never been a bottle of cognac in this random booze assortment. The last three batches I’ve subbed cognac with – I can barely bring myself to type these words – Bundy Rum. Yup, good (?!) ole Bundy Rum. The first time I tipped the rum into the pan I nearly gagged. I fully expected to have to throw the batch of faux gras away but no, it was a success.

And don’t worry about buying a fresh beetroot and roasting it like I did the first few times, just throw in some canned beet. 👌

I make this time and time again. No-one ever believes it’s faux. But it is. The only thing harmed to make this Faux Gras was my ego when I said I subbed Bundy Rum for cognac 🤷‍♀️

I almost never have cognac in the house. We’re non-drinkers yet always seem to have a random supply of spirits, usually received as gifts. I’m not proud to say that I’ve used a variety of dark spirits in this recipe, all with surprisingly good results. Go forth, use up that bottle of something you know you’ll never drink and enjoy.
